simple protein packed pancakes
These pancakes couldn’t get any simpler and are packed with protein, fiber and omega-3 fatty acids all because of these little seeds. I love adding chia seeds to just about anything - I throw them in smoothies, yogurt, on toast and even salads. It’s such an easy way to get some protein.
I always need to top my pancakes with some sort of fruit or I usually put fruit in the batter. I wanted to make this super easy and not a lot of prep for you guys hence why this is so simple. These are of course dairy free, gluten free and can easily be made plant based by swapping the egg for a flax egg.
Simple Chia Seed Pancakes
Makes: 4 Pancakes | Prep Time: 5 mins | Cook Time: 10 - 15 minutes | gluten free & dairy free
1 box of Simple Mills almond flour pancake mix - follow the instructions on the box
1 tsp cinnamon
2 tbsp chia seeds
Follow the instructions on the box plus the cinnamon - once you’ve completed that, add in the chia seeds. I like the batter to sit for a couple of minutes so the seeds expands and aren’t as crunchy. Heat a nonstick skillet with a little coconut oil and pour batter to form pancakes. Cook until edges are dry and then turn and brown the other side. I like to top these with fruit, coconut flakes and date syrup!
