I think breakfast might be my favorite meal of the day. There are so many different dishes that can be thrown together for a great breakfast and it’s so easy to mix it up, plus I love a good breakfast dish for dinner too. I hear from so many people that they just don’t have time to make breakfast before work so they end up not eating breakfast at all, which I don’t know how they make it through their morning without some fuel?!

I wanted to share my go-to, super easy, packed with protein and nutrients breakfast bowl with you to make mornings a lot easier for ya!

Chia seeds are PACKED with nutrients - full of fiber (the majority of the carbs are actually fiber), loaded with antioxidants, a good balance of essential amino acids and high in Omega-3 fatty acids.

Overnight Chia & Oat Pudding

Makes: 1 bowl | Prep Time: 5 mins | gluten free & dairy free

Ingredients:

2 tbsp chia seeds
1/4 c gf organic rolled oats
1 tsp cinnamon
2 scoops collagen, @vitalproteins
1 cup almond milk, @califiafarms
A little honey or maple syrup

Directions:

Whisk all ingredients together in a bowl or use a container with a lid. If you don’t use a container, just use plastic wrap to cover the bowl. Place in the fridge overnight or for at least 3 hours. Top with all the good stuff!! I like to do a scoop of almond butter, fresh fruit, shredded coconut flakes, bee pollen and hemp seeds.
